Hake & Vegetables on the Traeger

A Spring/Summer special wood roasted hake fillets is the star of this dish. Cooked with roasted new potatoes and broccoli. Hake is a firm white fleshed fish with an excellent flavour, this was roasted with olive oil, rosemary and seasoned with cornish sea salt and cracked black tellicherry pepper. The roasted broccoli adds a deep green irony contrast and is now a favourite, you can add a little heat with fresh black pepper or dried chilli flakes.
